Zilzil Tibs (ዝልዝል ጥብስ)

Ingredients:

1.5 pounds beef sirloin, cut into thin strips
2 tbsps. vegetable oil
1 large onion, thinly sliced
2 cloves garlic, minced
1 tsp. grated ginger
1 tsp. berbere spice blend (adjust to your spice preference)
1 tsp. paprika
1/2 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. turmeric
Salt and black pepper, to taste
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
Fresh cilantro, chopped (for garnish)

Directions

1. In a large bowl, combine the beef strips with the minced garlic, grated ginger, berbere spice blend, paprika, ground cumin, ground coriander, turmeric, salt, and black pepper. Toss well to coat the beef evenly with the spices.
2. Let it marinate for at least 30 minutes or up to overnight in the refrigerator.
3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
4. Add the sliced onions to the skillet and sauté until they turn golden brown and caramelized, about 8-10 minutes.
5. Push the onions to one side of the skillet and add the marinated beef strips to the other side.
6. Cook the beef for about 3-4 minutes per side until it is browned and cooked to your desired level of doneness.
7. Add the sliced bell peppers to the skillet and stir-fry for an additional 2-3 minutes until they are slightly softened but still crisp.
8. Adjust the seasoning with salt and black pepper if needed.
9. Remove the skillet from heat and transfer the Zilzil Tibs to a serving platter.
10. Garnish with freshly chopped cilantro.
