Gomen Besiga (ጎመን በስጋ)
Ingredients:
2-3 pieces of injera, torn or cut into small pieces
200g beef, cut into small cubes
1 bunch of collard greens (gomen), washed and chopped
1 onion, finely chopped
2 cloves garlic, minced
2 tbsps. niter kibbeh (Ethiopian spiced clarified butter) or vegetable oil
1 tbsp. berbere spice (Ethiopian spice blend)
1 tsp. paprika
1 tsp. ground cumin
Salt, to taste
Water, as needed
Chopped fresh herbs (such as parsley or cilantro), for garnish (optional)
Type:

Directions
1. Heat the niter kibbeh or vegetable oil in a large skillet or pan over
medium heat.
2. Add the chopped onion and sauté until it becomes translucent, about
5-6 minutes.
3. Add the minced garlic to the skillet and cook for an additional
minute.
4. Add the beef cubes to the skillet and cook until they are browned
and cooked through.
5. Add the berbere spice, paprika, ground cumin, and salt to the skillet.
6. Stir well to coat the beef cubes with the spices.
7. Add the chopped collard greens (gomen) to the skillet and mix well
with the beef and spices.
8. Pour in a little water to create a sauce-like consistency. Cover the
skillet and simmer for about 15-20 minutes, or until the collard
greens are tender, stirring occasionally.
9. Add more water if needed.
10. Tear or cut the injera into small pieces and add them to the
skillet.
11. Mix well to coat the injera pieces with the sauce.
12. Continue cooking the mixture for about 5-7 minutes, stirring
occasionally, until the injera softens and absorbs the flavors of the
sauce.
13. Add more water if needed to prevent sticking or drying out.
14. Taste and adjust the seasoning with salt, if necessary.
15. Remove the skillet from heat.
16. Garnish the Gomen Besiga Fitfit with chopped fresh herbs,
such as parsley or cilantro, if desired.
17. Serve the Gomen Besiga Fitfit warm as a main dish or as a
side dish with additional injera or bread
