Fosolia Tibs (ፎሶልያ ጥብስ)
Ingredients:
2 cups green beans, trimmed and cut into bite-sized pieces
1 cup carrots, sliced into thin rounds or matchsticks
1 medium onion, thinly sliced
2 cloves garlic, minced
1 tsp. ginger, grated
1 tsp. turmeric powder
1 tsp. cumin powder
1/2 tsp. paprika
Salt, to taste
2 tbsps. vegetable oil
Freshly squeezed lemon juice, for serving (optional)
Chopped fresh cilantro, for garnish
Type:

Directions
1. Heat vegetable oil in a large skillet or frying pan over medium heat.
2. Add the thinly sliced onions to the pan and sauté until they become
golden brown, about 5-6 minutes.
3. Add the minced garlic and grated ginger to the pan.
4. Stir and cook for an additional 1-2 minutes.
5. Add the green beans and carrots to the pan.
6. Stir well to combine with the onions, garlic, and ginger.
7. Sprinkle the turmeric powder, cumin powder, paprika, and salt over
the vegetables.
8. Stir to coat the vegetables evenly with the spices.
9. Cover the pan and cook the vegetables for about 10-15 minutes, or
until they are tender but still slightly crisp.
10. Remove the lid and increase the heat to medium-high. Sauté
the vegetables for an additional 2-3 minutes to lightly brown them.
11. Remove the pan from heat and let the Fosolia Tibs with
Carrots cool slightly.
12. Squeeze some fresh lemon juice over the dish, if desired, for
a tangy flavor
