Firfir (ፍርፍር)
Ingredients:
2-3 pieces of injera, torn or cut into small pieces
1 onion, finely chopped
2 cloves garlic, minced
2 tbsps. niter kibbeh (Ethiopian spiced clarified butter) or vegetable oil
1 tbsp. berbere spice (Ethiopian spice blend)
1 tsp. paprika
1 tsp. ground cumin
Salt, to taste
Water, as needed
Chopped fresh herbs (such as parsley or cilantro), for garnish (optional)
Type:

Directions
1. Heat the niter kibbeh or vegetable oil in a large skillet or pan over
medium heat.
2. Add the chopped onion and sauté until it becomes translucent, about
5-6 minutes.
3. Add the minced garlic to the skillet and cook for an additional
minute.
4. Add the berbere spice, paprika, ground cumin, and salt to the skillet.
5. Stir well to combine the spices with the onions and garlic.
6. If the mixture becomes too dry, add a little water to create a saucelike consistency.
7. Tear or cut the injera into small pieces and add them to the skillet.
8. Mix well to coat the injera pieces with the sauce.
9. Continue cooking the mixture for about 5-7 minutes, stirring
occasionally, until the injera softens and absorbs the flavors of the
sauce.
10. Add more water if needed to prevent sticking or drying out.
11. Taste and adjust the seasoning with salt, if necessary.
12. Remove the skillet from heat.
13. Garnish the firfir with chopped fresh herbs, such as parsley
or cilantro, if desired.
14. Serve the firfir warm as a main dish or as a side dish with
additional injera or bread.
