Buticha (ቡጥጫ)

Ingredients:

1 cup cooked chickpeas
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp. lemon juice
1 tbsp. olive oil
1 tsp. ground cumin
1/2 tsp. paprika
1/4 tsp. cayenne pepper (optional, for a spicy kick)
Salt, to taste
Fresh parsley or cilantro, chopped (for garnish)

Directions

1. In a food processor or blender, combine the cooked chickpeas, chopped onion, minced garlic, lemon juice, olive oil, ground cumin, paprika, and cayenne pepper (if using).
2. Pulse or blend until smooth and well combined.
3. If needed, you can add a little water to achieve the desired consistency.
4. Taste the buticha and add salt as needed, adjusting to your preference.
5. Transfer the buticha to a serving bowl.
6. Garnish with freshly chopped parsley or cilantro.
7. Serve the buticha as a dip with vegetables, bread, or chips.
8. It can also be used as a spread or filling in sandwiches or wraps.
